「居酒屋の鍋、あれはぼったくりです。」

今回は、冷田井トマトさんがとある外食に対する意見表明をする回です。ぜひお楽しみに!
鍋は最高の料理だと思っている。お湯に野菜をぶち込んで、調味料を変えれば全然違う鍋になる。塩、醤油、味噌、キムチ、もつ、トマト——ワンポットで何でもできて、人数が増えても手間が変わらない。大就職の極みです。
だからこそ、冬になるたびに繰り返される「鍋食べに行きましょうよ」という誘いに、トマトは疑問を感じている。
先日、5人でもつ鍋の店へ。1人前2000円、2人前から注文可。ビールは1杯700円。トータルで、なかなかのお会計になった。
でも待ってほしい。鍋って、自分で調理しているじゃないですか。
外食が正当化される食べ物には条件がある。技術が必要なもの——天ぷら、親子丼、専門の職人が調理してはじめてうまいもの。あるいは素材の品質が価格に直結するもの——高級焼肉なら、肉の良さがそのまま値段の理由になる。
でも鍋は違う。野菜、豆腐、もつ——調理は自分。しかも素材の高級感は他の料理と比べて薄まる。それなのに「鍋を推してる居酒屋」というだけで値段が跳ね上がり、付随するビールや一品料理まで高くなる構造になっている。
お店側の論理は明快だ。仕込みが少ない、調理が楽、単価が取れる、コース料理にも組み込みやすい——居酒屋にとって鍋は優秀なメニューです。利用する側がそれを見抜かないといけない。
許容できる外食鍋の基準は、もつ鍋・すき焼き・あんこう鍋など、素材や専門性に価値があるもの。しゃぶしゃぶは食べ放題なら許容範囲。危険なのは「居酒屋の片手間鍋」——あれはやめた方がいい。
あと、知らない人と鍋を囲む「初見鍋」も要注意。具材を誰がどれだけ取るかという暗黙の駆け引きが生まれて、全員が少しずつ気を遣う。
鍋は家で食べよ。これが今回の結論です。

Tomato loves hot pot (nabe). Loves it so much he makes it at home several times a week, year-round. Drop vegetables in boiling water, add your seasoning of choice — salt, soy sauce, miso, kimchi — and you have a completely different dish each time. Maximum output, minimum effort.
Which is exactly why he has a problem with restaurant hot pot.
After a recent outing with five people to a motsunabe (offal hot pot) restaurant in Ueno: ¥2,000 per person (minimum two servings), ¥700 per beer, and a final bill that didn't match the experience. The guests were doing the cooking themselves. The ingredients were nothing special. And yet the price tag implied otherwise.
His framework for when restaurant food is worth it: dishes that require real skill (tempura, oyakodon, anything where technique is the product), or dishes where premium ingredients are the point (high-end yakiniku, where the beef quality justifies the price). Hot pot fails both tests. Vegetables and tofu don't become luxury items just because you're sitting at a restaurant.
The exception: genuine specialists. Anko nabe (monkfish hot pot), proper motsunabe restaurants, or all-you-can-eat shabu-shabu for the protein-hungry. The danger zone: izakaya side-menu hot pot.
Also flagged: sharing a hot pot with people you've just met. The unspoken rules around ingredient distribution create a low-grade social tension nobody needs.
